My doctoral study is focused on the development of foodstuffs for particular nutritional uses with application of plant by-products. The aim of this work is to develope new products with high nutritional value for Coeliac patients and people suffering from food allergies and food intolerances. New products will be high in carotenoid content utilised from by-products of tomatoes and chilli peppers processing to improve appearance, taste and nutritional value of products. Carotenoids have good antioxidant, provitamin and other health benefits which we want to use in order to produce these kinds of functional foods. The study of application of carotenoids from by-products can have importance in term of development of new products and hereby in term of utilization of secondary by-products from food production.
