The cause of colour changes during the development of the loquat fruit

Carotenoids are pigments responsible for the bright red, yellow and orange colors of fruit. Here, researchers use analytical and molecular methods to describe the carotenoid biosynthetic pathway of loquat fruit during the fruits on-tree development. Carotenoid composition was found to be greatly affected during fruit development, with striking differences between flesh and peel tissue.
