My research activities focus on the preservation of fruits and vegetables, processed into juices, smoothies or fresh-cuts. To this aim, we investigate lactic fermentation and biocontrol. Apart from increasing shelf-life and changing sensory properties, lactic fermentation has an impact on bioactive compounds, such as phenolic compounds and carotenoids. We also work on the knowledge of microbial ecosystems, from field to processed food.
