I started the research activity in November 1993, in the Department of Food Technology, Food Science and Nutrition and obtained the position of Head Professor in 2009. I have a wide experience in teaching different subjects in the Bachelor of Food Science and Technology, Veterinary Science and Biochemistry. In addition, i carried out the teaching activity in post-graduate levels in master and Doctorate. I've participated in several research projects obtaining budget from the regional and national Governments and also from the EU. I was the Spanish coordinator of the project Lycocard “Role of lycopene in the prevention of cardiovascular disease” (European project from the FP VI, with five year of duration 2006-2011) and also was the coordinator of the “Food Products Studies” pillar, working in collaboration with other research groups and also with tomato processor industries. In addition, I was also the Spanish representing of the action Cost 926 “Impact of new technologies on the health benefits and safety of bioactive plant compounds”. In addition, i have a lot of experience working with the food industry, by developing applied research with several companies in the area of beneficial effect of plant foods for human health. Nowdays, I am working in the effect of consumption of carotenes in the regulation of gene expression of lipid metabolism, conducting in vivo studies with rats and humans.
