His current main research interest is in the chemistry of natural organic compounds with analytical applications in the field of food chemistry. In particular, the chemical characterization of molecules with antioxidant activity such as carotenoids and polyphenols and their metabolites, in complex natural matrices, such as fruits, oils, wines, citrus fruits and their products, medicinal herbs, food products and marine organisms, through the use of advanced analytical techniques of chromatography and spectroscophy and multidimensional techniques.
