Areas of research: The main research area deals with food processing and quality. In particular, evaluation and optimization of the nutritional and technological quality of wheat and other cereals and influence of processing; identification of chemical markers to be evaluated in the food end-product for the hygienic quality evaluation of the raw material; evaluation and identification of heat damage indices; chemical and physical characteristics of shell eggs and egg products.
Research activities relevant to EUROCAROTEN.
Past: Study of the influence of food processing, storage, genotype and/or cropping environment, flour granulometry as well as seed distribution on carotenoid composition of several cereal species and products. The enzymatic activity involved in the carotenoid stability was also investigated.
Current: Study of the bioavailability of carotenoids from cereal products through in vitro techniques. Development of cereal-based functional foods enriched with encapsulated bioactive compounds. Screening of carotenoids profile in different Andean functional products. Carotenoid stability during processing of tomato products.
