The Laboratory of Chemical Analysis (LCA, head Prof. L. Vanhaecke) of Ghent University has valuable analytical expertise in various domains, which are in essence all concerned with food safety and quality in relation to human health. Initially, analytical mass spectrometric strategies were directed towards the targeted detection and measurement of well-specified residues, contaminants, food components or metabolites thereof, within a wide diversity of biological, environmental and food matrices. However, in the last decade, the path of untargeted metabolomics was entered, thereby having access to various (hybrid) HRMS systems. At present, an in-depth experience in the various aspects of the metabolomics workflow has been gathered, and an expedient and actionable metabolomic framework has been established.
With respect to the domain of carotenoids, a metabolomics methodology has been developed for carotenoid profiling in tomato. Hereby, an overall view on potentially present carotenoids in tomato fruit was acquired. In addition, the impact of greenhouse conditions during tomato growth and ripening has been assessed in terms of tomato fruit carotenoid alterations. Moreover, the methodology has also been employed to investigate the influence of various parameters during industrial processing of tomato fruits.
