Short research description: 

In the last three years I have dedicated my work to the study of carotenoids, mainly in the field of food.
Through a scientific collaboration agreement with a company, I have been doing a research related to food quality and carotenoids.
Currently I perform a doctoral thesis on carotenoids in the research group "Color and Quality Food" (AGR-225). In this group, I develop my research in the study of carotenoids from different perspectives in order to obtain relevant information for their use as functional food ingredients. I study new methodologies for rapid quality control. I also research the relationships between color, chemical composition, and sensory appreciation in different food matrices. Currently I am doing different studies about carotenoid digestions. I have collaborated in several scientific publications.
During my PhD, I done a short-stay at the University of Panama with Prof. Dr. Enrique Murillo. During that stay, I developed methods for isolation of carotenoids in tropical fruits. I also did a stay under the supervision of Prof. Dr. Torsten Bohn at the Luxembourg Institute of Science and Technology (LIST) studying the fate of colourless carotenes during simulated in-vitro digestion.
I have been involved in organizing I+D activities. I was member of the Organizing Committee of an International Congress, Carotenoids as ingredients in functional foods, and currently I am part of the Think Tank representative group of Eurocaroten.
In addition, I have taught in a course on carotenoid analysis and it is expected to start my teaching at the University this year.
