Short research description: 

The research conducted in my team deal with the link between nutrition and health, more especially on carotenoids and polyphenols, and their metabolites, and health. My personnl expertise is on carotenoids, their chemistry and physico-chemical properties. We study antioxidant properties of carotenoids, their stability during food processing and digestion, we identify their oxidation products and their mechanism of fortion, we study their metabolisation during digestion both in vitro in static and dynamic models and in vivo in animals and humans in collaboration.
