WG2: Quality & Food Chain

This WG brings together mainly chemists, food scientists and food technologists.

Topics of interest are, among others: 

  1. The design and development of high-quality (safe, appealing, functional, sustainable) carotenoid-containing foods (CCFs);
  2. The assessment of data quality and development of harmonized protocols regarding assessment of carotenoids analysis in foods and bioacessibility/bioavailability;
  3. The assessment of consumers' preferences and acceptability of CCFs;
  4. Evaluation of the effect of processing and storage conditions in the carotenoid levels and bioavailability as a function of the matrix.
